Chane ke kabab (Black chickpeas)


Kabab is one of my favorite food.Kabab is basically made of minced meat.But the people who are vegetarian prepare kabab by using carrot,spinach,,raw banana,beans etc.I used Black chickpeas.You can also use white chickpeas,split yellow lentils.This can be served as an evening snacks with  tea.

Ingredients:
  • 200 whole black chickpeas
  • 1 egg
  • 1 small size finely chopped onion
  • 1 teaspoon garam masala
  • 3 chopped green chilies
  • 1 bunch chopped cilantro
  • 1/2 inch finely chopped ginger
  • 1/2 teaspoon baking powder
  • Salt to taste
  • 2 tablespoon oil
  • 100 gm sesame(optional)
How to prepare:
  1. Soak the chickpeas overnight.
  2. Place chickpeas in pressure cooker.
  3. Add 1 cup water and baking powder.
  4. Let them cook for 20 mints on low heat or until they are completely softened.
  5. Drain through a sieve,let it cool for 5 mints.
  6. Mash the chickpeas through potato masher.Set it aside.
  7. Mix egg,onion,cilantro,salt,garam masala,ginger and green chili in a bowl.
  8. Add mashed chickpeas and mix it well.
  9. Divide mixture into 6 equal balls.
  10. Press each ball into 2 inch diameter circle.(sprinkle sesame seeds on top,it's optional)
  11. Heat oil in a pan,fry pieces until golden brown. OR
  12. Bake at 375 F for 30 mints.
  13. Serve with tomato-chili sauce.

Gobhi ke kofte (Cabbage balls)


Cabbage is a green leafy vegetable,good source of vitamin c and fiber.You can also say diet food because of low calories.Kofta is a spicy non-veg dish,originally made of minced meat rolled into a small ball.But Gobhi kofta is the vegetarian alternative to meatballs.Here is my favorite cabbage recipe.....Gobhi ke kofte.

Ingredients:
For kofte(ball) 
  • 250 gm grated cabbage
  • 4 tablespoon gram flour 
  • 1 teaspoon cumin seed
  • 1 teaspoon sesame seed
  • 1teaspoon mango powder
  • 2 chopped green chilies
  • 1/2 teaspoon minced ginger
  • 2 tablespoon chopped cilantro
  • Oil for frying
  • salt to taste
For gravy
  • 6 tablespoon tomato puree
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 2 tablespoon yogurt
  • 1/2 teaspoon garam masala
  • 4 tablespoon fried onion
  • 4 tablespoon oil
  • salt to taste
How to prepare:
For kofte(ball)
  1. Mix all kofta ingredients in a bowl.
  2. Shape into small balls.
  3. Heat the oil in a frying pan over medium heat.
  4. Deep fry
  5.  each ball until browned.
  6. Drain balls on a paper towel.
For gravy
  1. Heat the oil in a pan on medium heat.
  2. Add ginger-garlic paste,stir for 2 mints.
  3. Add all gravy ingredients,stir it.
  4. Put the lid on and let it cook for 10 mints over medium heat
  5. After that add 1 cup water and bring it to a boil.
  6. Simmer it for another 10 mints.
  7. Place fried cabbage balls in a bowl and pour gravy.
  8. Serve with zeera rice(cumin rice) or plane rice.
You can eat your kofta without gravy or with gravy.

Mushroom 65


This recipe is the version of chicken 65.Chicken 65 is a popular starter in many restaurants.I used mushroom instead of chicken.You can also use cauliflower,potatoes.paneer etc.When first time I tried mushroom 65,it's hard  to differentiate between mushroom and chicken .

Ingredients:
  • 250 gm white/brown mushrooms
  • 1 egg
  • 2 tablespoon corn starch
  • 4 tablespoon all purpose flour
  • 2 teaspoon ground black pepper (divided)
  • 1 teaspoon red chili powder
  • 5 tablespoon tomato puree
  • 1/4 teaspoon ajinomoto salt
  • 1 teaspoon ginger-garlic paste
  • 1 tablespoon soya sauce
  • 1 tablespoon sweet n sour tomato sauce
  • 1 teaspoon green chili sauce
  • 1 teaspoon basil leaves (optional)
  • 1 teaspoon oregano leaves (optional)
  • Oil for frying
  • Salt to taste


How to prepare:
  1. Mix all purpose flour,cornstarch,egg,1 teaspoon black pepper and 1/2 teaspoon salt in a bowl.
  2. Add little water to make the batter thick if needed.
  3. Wash mushrooms and pat dry.
  4. Trim the stem off.
  5. Dip each mushroom into the batter and deep fry until golden browned.
  6. Drain on paper towel.
  7. Heat 1 tablespoon oil in a pan on medium heat.
  8. Add ginger-garlic paste,stir for 30 sec.
  9. Add red chili powder,tomato puree,i teaspoon black pepper,ajinomoto,soya sauce,sweet and sour tomato sauce,green chili sauce and salt.
  10. Stir fry until the sauce has thickened.
  11. Then add basil and oregano leaves(optional) or you can just add chopped cilantro leaves.
  12. Add fried mushrooms into sauce and toss gently to coat.

Pineapple flower Vase


Pineapple is a yellow juicy fruit,has a vibrant flavor and good source of vitamin C.Pineapple can be used in salad,pie,skewer,cake,smoothie etc.Today I prepared pineapple flower vase,it looks like cotton candy.Pineapple chunks are coated with frosting and topping with sprinkles that add fun to your candy.It's a tempting dessert for kids.

Ingredients:
  • 250 gm pineapple cubes/chunks
  • 150 gm pink frosting
  • 150 gm yellow frosting
  • 100gm melted chocolate
  • Sprinkle (any color)
  • 9 wooden skewers
  • 1 vase (any size,any color) 

How to prepare:
  1. Divide the chunks into 9 equal proportion.
  2. Thread the each proportion of pineapple's chunks onto the skewers
  3. Coat 4 skewered pineapple completely with yellow frosting.
  4. Coat 3 skewered pineapple on all side with pink frosting.
  5. Coat 2 skewered pineapple with melted chocolate.
  6. Add sweet sprinkles on top.
  7. Gently place the skewers into the vase.
  8. To enhance the beauty of  presentation,you can use natural/artificial flowers and leaves.

Cinnamon rolls



Cinnamon:One of the highest anti-oxidant spice,used in both sweet and savoury foods.Everyday the knowledge about the health benefit of cinnamon is increasing.It play crucial role in diabetic.It's my observation the use of cinnamon is very common in USA.First time I ate cinnamon rolls in USA,the taste was awesome and the sweet hot smell of cinnamon drove me crazy.Today I prepared  my own style of cinnamon rolls.Eat healthy,live healthy.

Ingredients:
  • 200 gm all purpose flour
  • 5 tablespoon milk
  • 15 gm dried yeast
  • 4 tablespoon oil
  • 100 gm teaspoon sugar
  • 1/4 teaspoon salt
  • 100 gm brown sugar
  • 1 egg
  • 30 gm chocolate
How to prepare:
  1. Warm milk in microwave for 30 sec.
  2. Add yeast and 1 teaspoon sugar in milk,mix it and keep it aside.
  3. In a mixing bowl combine all purpose flour,salt,oil,egg and milk mixture,knead dough until soft and smooth.
  4. Cover the dough with a damp cloth,set it aside for 1 hour.
  5. Roll out dough into a rectangle shape.Thickness should be 1 cm.
  6. Sprinkle sugar,cinnamon and brown sugar,roll up dough width wise.
  7. Cut into 12 equal pieces.
  8. Place cut side up in a greased baking tray.
  9. Cover it with aluminium foil,set it aside for another 1 hour.
  10. Preheat oven to 375 F and let it bake for 20 mints or until golden brown.
  11. Garnish with melted chocolate.
NOTE : In winter best way to raise the dough is to use your oven.
             With sugar and brown sugar,you can use raisins.

Hat cake



Beautiful girls n ladies hat for spring :)
Springtime means lovely flowers of different color.Enjoy this cheerful pink color cake with your kids and family.My daughter really liked it.Happy spring.....

Ingredients:

  • 4 tablespoon all purpose flour
  • 2 eggs 
  • 4 tablespoon oil
  • 5 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 teaspoon vanilla essence
  • 150 gm pink frosting (you can use any color)
  • 1 flat dinner plate
  • 1/2 meter ribbon/lace 

How to prepare:
  1. Mix all purpose flour,salt,baking powder together.
  2. Crack egg into a bowl,add sugar vanilla essence and oil,mix it well until sugar dissolved.
  3. Then add into flour mixture,whisk it until the mixture is light.
  4. Pour into round shape greased baking tray 
  5. Place tray into preheated oven.
  6. Bake at 350 F for 20-25 mints.
  7. Before removing tray,insert wooden skewer into cake center.
  8. If it comes out clean,cake is ready.
  9. Let it cool down for 30 mints.
  10. Now Turn  the plate back side up.
  11. Cover completely with frosting.
  12. With the help of fork give a straw hat look in circular motion.
  13. Place the cake in the center of the plate.
  14. Cover completely with frosting.
  15. Again with the help of fork give a straw hat look in circular motion.
  16. stick lace to the side of the cake.
  17. At the one side of hat,place ribbon's bow or flowers whatever you like.

Egg stuffed tomato

It's spring,gorgeous colorful flowers bloomed everywhere.So I planned to share this rich red color recipe with you. Tomato and egg....what a good combination?Tomatoes are low calories,low in fat and have zero cholesterol level fruits.Egg is a good source of protien,good for developing muscle's strength.People used to eat scrambled egg,egg salad with tomato, peas etc.

Ingredients:

  • 1/2 kg medium size tomatoes
  • 3 eggs
  • 100 gm fried onion
  • 6 cashews
  • 1 teaspoon garlic
  • 1 teaspoon ginger
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 5 tablespoon oil
  • 1 teaspoon cumin seed
  • 1 teaspoon sesame seed
  • salt to taste
How to prepare:
  1. Wash tomatoes,cut off stem and scoop out pulp gently.
  2. Place fried onion,cashews,sesame seed,tomato pulp in a grinder. Make a smooth paste.
  3. Heat oil in a pan over medium heat.
  4. Splitter cumin seeds.
  5. Add ginger-garlic paste,stir for 2 mints.
  6. Add coriander,turmeric,salt,red chili powder,garam masala.
  7. Now add paste and stir fry until oil separates the pan.
  8. Add 1 cup water,stir well over low heat.
  9. Crack egg into a bowl,add salt and beat well.
  10. Fill each tomato with beaten egg with the help of spoon and gently  place tomatoes in gravy.
  11. Put the lid on for 5 mints over high heat.
  12. After 5 mints,turn the heat on low,cook for 15 mints.
  13. When the tomatoes become soft,turn the heat off.
  14. Serve hot in a plate.

Baghara Baigan

Baghara Baigan looks so tempting and delicious.I don't like to eat eggplant but last weekend I had tried this at one of my friend's home.It was superb.Gravy was very rich  in texture.Basically it is a south indian muslim's recipe.The people who doesn't like eggplant,can use potato,cauliflower,capsicum,drumstick etc.Lets cook....Bhaghara Baigan.

Ingredients:

  • 6 small size eggplant/ bringle
  • 1 tablespoon sesame seed
  • 3 tablespoon peanut
  • 2 tablespoon coconut powder
  • 100 gm oil
  • 1 teaspoon cumin seed
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1 tablespoon ginger-garlic paste
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 50 gm fried onion
  • 1 teaspoon roasted coriander powder 
  • 2 tablespoon tamarind pulp
  • 1 cup water
  • salt to taste

How to prepare :
  1. Add sesame seed,peanut,coconut powder and fried onion in a mixing bowl.
  2. Blend it together thoroughly.
  3. Heat oil in a pressure cooker on medium heat.
  4. Splitter cumin seeds,add ginger-garlic paste,fry for 3 mints.
  5. Then add sesame-peanut paste,garam masala,cumin,coriander,turmeric,chili powder.
  6. Fry it until golden brown or when the oil separates from the gravy.
  7. Slit each eggplant into quarters without removing stem.
  8. Add eggplant,tamarind pulp and water into gravy.
  9. When the cooker reaches high pressure.
  10. Remove it and let it cool for 10 mints.
  11. Open the lid and pour in a plate.
  12. Sprinkle roasted coriander powder.
Serve Baghara Baigan with Hyderabadi biryani.........I like to eat with hot crispy paratha.

Pineapple Pancake

When you are in hurry,don't have time to prepare breakfast for kids and your family....this recipe will work.It is so simple and easy to make.You can eat plain or with syrup.

Ingredients:
For pancake

  • 4 tablespoon all purpose flour
  • 1 egg
  • 2 tablespoon sugar
  • 1 teaspoon baking powder
  • 4 table spoon melted butter
  • 1 pinch salt
  • 1 teaspoon cinnamon powder
  • 100 gm diced pineapple
  • 4 tablespoon evaporated milk
For syrup 

  • 1 tablespoon honey
  • 100gm diced pineapple
  • 1/4 teaspoon cornflour
  • 1 tablespoon sugar
  • 4 tablespoon water

How to prepare:
For pancake
  1. Mix all purpose flour,baking powder,salt,cinnamon powder well together in a bowl.
  2. In another bowl mix egg,melted butter and sugar,mix it well until  the sugar is completely dissolved.
  3. Then add into flour mixture.
  4. Add diced pineapple(100gm),whisk it and make a smooth batter.
  5. Heat griddle or non-tick pan over medium heat.
  6. Pour the batter onto pan,approx 1/4 cup batter for each pan cake.
  7. If you are using normal pan then lightly grease your pan before pouring batter.
  8. When bubble forms on the surface,flip it and continue to cook until golden brown.
  9. Serve in a plate
For syrup
  1. Add diced pineapple in a saucepan over medium heat.
  2. Add sugar and honey.
  3. Mix corn flour and water well in a bowl,make sure no lumps of corn flour.
  4. Add into saucepan. 
  5. Bring it to a boil until slightly thickened .
  6. Remove it and let it cool off for 10 mints.
  7. Serve over pancake.
You can use this syrup over french toast and waffles also.

Combo Chaat

Chaat is a mouth watering snack,typically served at road side tracks from stalls or carts in India.Every region has its own version of  chaat.Variety of chaat is available in restaurants like samosa chaat,pani-puri chaat,bhel-puri chaat,mathara chaat,dahi-vada chaat,papdi chaat etc.My version's name is combo chaat,just combination of papdi,dahi bhalle,samosa and chhole chaat.It's really good....try it.I hope you will enjoy.

Ingredients:
  For chhole
  • 250 gm chick peas (kabuli or white chana)
  • 1 teaspoon ginger paste
  • 1 tea bag
  • 1 teaspoon pomegranate seeds
  • 1 teaspoon coriander-cumin powder
  • 2 tablespoon oil
  • 1/2 teaspoon cumin seed
  • 1/2 teaspoon red chili powder
  • 1 chopped tomato/tomato puree 
  • 1 pinch asafoetida
  • 1 teaspoon baking powder
  • 1/2 teaspoon garam masala
  • salt to taste
For samosa dough/papdi dough (divided)
  • 250 gm all purpose flour (maida)
  • 1/2 teaspoon onion seed (kalonji)
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 3 tablespoon oil
  • 1/4 teaspoon turmeric powder
  • Oil for frying
  • Water for kneading
For samosa filling
  • 3 boiled potatoes
  • 1 tablespoon oil
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon mango powder
  • 1pinch asafoetida
  • 1 chopped green chili
  • Chopped cilantro
  • salt to taste
For vade/bhalle
  • 250 gm black gram lentil (urad daal or maash daal without skin)
  • 2 green chilies
  • 1 pinch asafoetida(hing)
  • 2 garlic cloves
  • 1/2 teaspoon salt
  • Oil for frying
For tamarind sauce (saunth/Imli ki chatni)
  • 50 gm tamarind
  • 1/2 teaspoon salt 
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon roasted cumin powder
  • 200 gm sugar/jaggery(gud)
For mint-coriander/cilantro sauce (podina-dhania patti ki chatni)
  • 1 bunch cilantro
  • 1/2 bunch mint
  • 3 green chillies
  • 2 garlic cloves
  • 1 lime juice
  • salt to taste
For garnishing
  • 1 chopped onion
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon chaat masala(powder)
  • Chopped cilantro
  • 250 gm whisked salted curd
  • 1 pinch red chili powder

How to prepare:
Chhole
  1. Soak chick peas over night.
  2. In a pressure cooker on medium heat,add oil,when hot add cumin powder,asafoetida,pomgranate seeds,stir fry.
  3. Add ginger paste,cumin-coriander,red chili powder and tomato puree or chopped onion.
  4. Stir fry for 2-3 mints over medium heat.
  5. Add chick peas,2 cup water,baking powder,salt,garam masala and tea bag.
  6. Put the lid on and let it simmer for 20 mints on low-medium heat.
  7. Take out the tea bag,Cook chhole till gravy dries.
Filling
  1. Heat the oil in a pan.
  2. Add cumin,turmeric,red chili ,coriander,mango,asafoetida powder and salt.
  3. Stir for 1 mint then add boiled potatoes.
  4. Mash it well and remove from heat.
  5. Add chopped green chilies and cilantro.
Samosa
  1. Mix all purpose flour,onion seeds,salt,baking powder and 3 tablespoon oil.
  2. Knead with the help of water,make a smooth but tight dough.
  3. Set the dough aside for 15 mints.
  4. Take 3/4 dough,Divide dough into 4 equal size ball.(rest of the dough 1/4 is for papdi)
  5. Roll each ball into 6"oval shape and cut half each from center.
  6. Place half/semi-circle in your left hand and glue the periphery with water.
  7. Place one corners/edge to another edge,seal it,like a cone.
  8. Stuff each cone with potato filling and seal it tightly.
  9. Make sure it's completely sealed.
  10. Heat oil in a frying pan over medium heat.
  11. Fry samosa until golden brown.(through-out the flame should be medium)
  12. Drain and place on paper napkin.
Papdi
  1. Divide dough into 15 equal size ball or you can make more,size of papdi depends on you.
  2. Roll each ball into one inch diameter circle.
  3. Heat oil in a frying pan over medium-high heat.
  4. Fry each circle until both sides are golden brown.
  5. Drain and place on a paper napkin.
Vade/Bhalle
  1. Soak lentil for 5 hours.
  2. Drain it and place in a mixing bowl,add asafoetida,salt,green chilies and garlic.
  3. Blend it well,just add enough water as needed to blend.(no need to make a smooth fine batter)
  4. Batter should be light and fluffy,Pour in a bowl.
  5. Heat oil in a deep frying pan over medium-high heat.
  6. Place vada in pan with the help of tablespoon or hand(size depends on you)
  7. Fry the vada in a small batches until golden brown.
  8. Drain and place over paper towel.
  9. Pour 1 liter normal water on a big bowl.
  10. Add 1 teaspoon salt,add vada in this water for 2 hours.
  11. Squeeze gently with both hands,keep it aside.
Tamarind sauce
  1. Soak tamarind for 1 hr.
  2. Add 1 cup water,mash it well and drain through sieve.  
  3. Pour into a pan over medium heat.
  4. Add salt,cumin,chili powder and sugar or jaggery.
  5. Boil it until the sauce is thick.
Mint-cilantro sauce
  1. Wash mint and coriander leaves thoroughly. 
  2. Add mint leaves in a mixing bowl and 6-8 tablespoon water. 
  3. Add coriander leaves with stalks,add salt,green chilies,garlic and lemon juice.
  4. Grind it well until thick smooth paste.
Serving

 First make a bed of chhole in a plate,place 2 samosa in center,around the samosa place 4-6 vade and 10-12 papdi.Pour tamarind sauce,mint-cilantro sauce and curd on top.Now garnish with chopped onion,cilantro and sprinkle some cumin,red chili powder.If you need more spicy,you can garnish with chopped green chilies.

Four in one :) You can make separate chaat like papdi chaat,chhole chaat,samosa chaat and vada chaat.It's up to you which one would you prefer.

Marble cake

Cake with chocolates yummy yum....... is a favorite dessert of everyone,no matter what your age,young or old.One important thing about eating chocolate may reduce risk of heart disease.Kids love to eat chocolates with any combination like cup cakes,ice cream,cheese,smoothy, fruits,whole nuts etc.Here is Marble Cake recipe for everyone who loves chocolates.

Ingredients:

  • 250 gm all purpose flour
  • 300 gm chocolate (melted)
  • 200 gm sugar
  • 2 eggs
  • 150 gm melted butter or oil
  • 1 pinch salt
  • 1 teaspoon baking powder
  • 4 tablespoon water

How to prepare:
  1. Place all ingredients in a bowl except chocolate.
  2. Mix it well and beat it for 2-3 mints until batter is smooth
  3. Alternatively.pour cake batter and melted chocolate into a greased baking tray
  4. To create marbling effect,swirl the back of a spoon gently. 
  5. Place tray into a preheated oven (350 degrees F) about 30 mints.
  6. Before removing tray,insert wooden skewer into cake center.
  7. If it comes out clean,cake is ready.
  8. Let it cool off for 30 mints.
